- Breaded lions mane and oyster mushroom thermador stuffed portabello covered with a garlicky beurre blanc scallops and served with green bean almondine
- Cauliflower steaks with toasted hazelnuts, and an oregano, lemon zest browned butter sauce served atop creamy polenta and a harrissa herbed garbanzo salad
- Crispy tofu carpaccio with a habanero cream, arugula tomato salad and a hemp dill sauce served with scalloped potatoes and beet tartare
