Cornmeal Encrusted Tofu Nuggets
Sometimes the tastiest food is also the simplest. Here is a snack I made this week for my wife. I also served it at one of our game parties. Enjoy.
1# firm tofu, cut into 1"x 1/2" cubes
canola oil for searing
Dry ingredients
1/2c cornmeal
2T garlic powder, granulated
2T nutritional yeast
1T chili powder
1T black pepper
1T salt
1c hemp milk
2T
Dijon
mustard
Combine all dry ingredients in a bowl and mix thoroughly.
In a separate bowl whisk together milk and Dijon.
Place tofu into milk mixture and allow to marinate for at least 1/2 hour.
At medium high heat place 2 T oil in saute pan. (I like to use my cast iron skillet)
Remove tofu from marinade and gently roll each one in cornmeal mixture, being sure that they are well coated.
When the oil is hot and is near smoke point, carefully add tofu nuggets. Cook for two minutes or until brown and then flip and brown. Remove from pan and enjoy with you favorite condiment.
