Heading Back to Mendocino...... For the Weekend

Yesterday I spent the afternoon once again at VegNews HQ. It was fabulous. I received a phone call Wednesday night from Joe Connelly asking if I could prepare lunch for a special guest of theirs. "Sure!" I replied as it is always a pleasure to share my food with those around.

The guest was Jonathan Safran Foer, author of Eating Animals. I did not have the chance to chat with him, although I will be picking up his book at the local bookshop.

I created a three course lunch, starting this a Cobb style salad with shiitake "bacon", cornmeal encrusted tempeh, and diced tomato. Mistakenly I had forgotten to add avocado, but this is a definite plus for the salad. Luckily for me non-the-wiser as it was a very tasty salad. For the entree, Baked Polenta Lasagna, I added sauteed kale and portabella mushrooms with a tofu ricotta, delish. Dessert was a raw apple crisp. Using fresh Pink Lady apples were perfect as they are tart with a sweet skin.

I am participating in a Mushroom Workshop at The Stanford Inn tomorrow. I will surely post pictures and recipes from the event.
