How to Start a Day.

Breakfast! We all have heard this about a bazillion times. And studies show that breakfast is the most important meal. It helps feed the body and brain with energy to be alert and functional for us to work efficiently. I also know that nobody really has time to make breakfast, and that most think breakfast is a double latte and a danish. And sure that caffeine and sugar will give you a quick boost, but you are going to hit rock bottom in a couple of hours, maybe less. Is anybody with me on this?

So are two recipes, one for those on the go, and another for a casual weekend.

Shake, Rattle, and Run

1 medium banana
4-5 strawberries
1 cup apple juice
1 t maca
1/4 cup almonds, soaked
1 T spirulina
1 T hemp protein powder

  1. Place all ingredients in a blender and blend until smooth.

Classic Tofu Scramble

1/2 red onion, small dice
1/2 bell pepper, small dice
1 T cumin
1 T chili powder
1 T garlic powder
1 1/2 turmeric
1 lemon, juiced
8 oz firm tofu
1-2 cup nondairy milk (hemp or rice)
1/4 c Nutritional yeast

  1. In a saute pan, on medium heat, saute onion and bell pepper until tender.
  2. Stir in spices and cook until fragrant.
  3. Add lemon juice and tofu, stir until seasoned well, then add milk and yeast.
  4. Season with salt and pepper.

This can be adjusted in numerous ways, add mushroom or other vegetable if you like. Spice it up a little with your favorite hot sauce. Your possibilities are endless.

Enjoy.
