Iron Chef Bonding Time






Okay, as you can tell we have not had time to post a blog. We have been a very busy family with work, Groupons, meal planning and weddings. We have been so busy that we were thinking of ideas to have more family time.... plus we always need to create new recipes. So here we are Saturday night.... holding a family cook off.


The Rules:
1. We had 10 ingredients that we had to include which included: Broccoli, Brussels Sprouts, Carrot, Jalepeno, Potatoes, Portabellos, red onion, carrots, kale and frozen Blueberries

2. We each had to have an appetizer, an entree and a dessert.

3. We could use any other ingredients that we wanted in the house.

Between juggling putting our son to bed, taking out the dogs and all the tasks in between. We took turns in the kitchen. As we would switch off it made our lives more fun as we high fived to give a bath while the other cooked. Switched off so another would try and dress our son and say good luck as the next started to cook. We continued this until all chores and food was done.

Jennifer's menu:

Appetizer: Fried Jalapeno's stuffed with a Thyme, "cream cheese" and caramelized red onion filling

Entree: Hickory Portabello stuffed with a Quinoa, Kale, and Broccoli Stuffing

Dessert: Potato and Pecan Pie atop a blueberry pineapple sauce


Barry's menu:

Appetizer: Potato and Broccoli Curry cakes atop Kale topped with hickory portabello strips

Entree: Sweet and Sour stir Fry with rice noodles

Dessert: Blueberry "Cheesecake" topped with a Chocolate crust


How to caramelize an onion...
Add oil to your pan and heat. you want your oil to be hot before you add your onions.
Cut your onions in whatever shape that is best for your recipe.

When the oil is hot, add your onions. Cook slowly on medium low heat stirring occasionally.

Cook until they are browned and tender. Watch that they don't burn. Do NOT add salt while caramelizing an onion.
