Shepherd's Pie
tempeh, sliced thin
1/2 medium onion small dice
1 large carrot, medium dice
1 # peas
1 1/2 cup corn kernel
2 # potato, boiled and mashed
1/4 cup earth balance
1/2 cup broth
1 t worcestershire
Salt and pepper to taste
Directions
1. Saute onions and carrots until tender then add tempeh and cook until browning occurs.
2. Add peas and corn, broth and worcestershire and simmer for 2-4 minutes.
3. add earth balance to mashed potatoes and season with salt and pepper.
4. using a casserole dish, first place tempeh/ vegetable mixer then top with mashed potato.
5. Bake at 350 for 15- 20 minutes.
