Our Favorite Vegetarian Pho Soup Recipe

There is nothing that my family loves more than a warm soup on a cool Fall day.  This is one that the whole family loves!  We especially loved this vegetarian 'pho' soup. and here is the recipe. If you try it, let us know how it turns out.1 large yellow onion, halved and sliced1⁄4 cup vegan Worcheshire Sauce2 large portabellos, sliced6-8 shiitakes, remove stems, slice1⁄2 cup cilantro, rough chopped1 lb rice noodles, cooked according to box instructions.

 Directions

  1. In a medium sized pot, add your onions to 1T olive oil. Cook until
  2. Add 4 cups of vegetable broth, worchestershire, Tamari.
  3. Add Portabellos and shiitakes and cook until tender.
  4. Salt and pepper to taste.
