Day 13: gluten-free and vegan decadent holiday recipes: Chocolate Chunk Cookies
OMG..... These are hecka good. These are heaven. These are even amazing as cookie dough. I ate the whole bowl and I feel sick but I want to eat more good. These are so good I forgot to share good. These are incredible. Ok. You get the idea... but wow. Don't expect health in this recipe... this is pure extravaganza!
Day 13:
Chocolate Chunk Cookies
2 1/4 cups Gluten-free all purpose flour (I used Pamela's)1 tsp baking soda1 tsp salt1 cup Vegan butter3/4 cup cane sugar3/4 cup brown cane sugar1 tsp vanilla extract2 Egg Substitutes1/2 lb 72 % vegan dark chocolate
1. Mix the flour, baking soda and the salt in a small bowl.2. Mix the vegan butter, cane sugars, vanilla and Egg Replacer eggs in another bowl. Mix with a fork until well incorporated and soft.3. In a food processor, place your 72% vegan dark chocolate. Process on pulse until there are small chunks.4. Add flour slowly to the vegan butter and mix well. Continue adding until all of the flour is added.5. Add the chocolate and gently fold into the dough.6. Cook at 375 until golden brown about 9-11 minutes.
