Day 5: Gluten Free and vegan Decadent holiday recipes: Pressure Cooker Curried Tofu Paneer

This is a great, quick and easy curried tofu.  It has a rich and creamy texture and it is great served on rice or a rice noodle.  It would be incredibly delicious and amazing in a creamed spinach.



Day 5: 
Pressure Cooker Curried Tofu Paneer

1 can coconut milk, full fat

2 Tablespoons brown Cane sugar

2 Tablespoons Wheat free Tamari

1 clove garlic, minced

1 teaspoon cumin

1/8 teaspoon tumeric

15oz tofu, cubed

6 tablespoons flaked coconut

1 tablespoon fresh cilantro, minced

1 teaspoon salt

1/2 cup red onion, small diced and sauteed


1. Put all of the ingredients in the pressure cooker on high for 16 minutes.
