Day 6: Vegan Gluten-free Decadent Holiday: hearty mac & cheese
On the coldest of the cold days, with your greatest group of friends and family this decadent meal will feed many and satisfy all. Enjoy this veggie rich and creamy goodness.
Day 6:
Hearty Mac and Cheese: The Works
2 cups Butternut squash, Chopped
10oz spinach
1 large cauliflower, chopped
1 cup of Soy milk
1 cup water
1T veggie Boullion
8oz gf brown rice pasta, cooked and drained
4T Earth Balance1 cup of Soy milk3T Nutritional yeast1tsp garlic salt1T tumeric2 cup Beyond Meat, chopped1 can artichoke hearts1 1/4 cup Daiya Shredded Cheese
1. In a Saute pan place the first 6 ingredients and cover. Stir frequently. Cook until tender about 10 minutes.
2. In a large pot add the remainder of the ingredients. Cook on low until everything is melted and incorporated.3. Add the vegetable mixture to the pasta and stir it in.
