Day 9: Decadent vegan and gluten-free holiday recipes: These are not your mother's Mashed potatoes: The works!

Okay... this was amazing.  If you want to wow your friends - this is the recipe.  This is a mashed potato recipe... but it is the works and it is delicious.  It will compliment any meal! Have the best dish at your next pot luck with these amazing mashed potatoes.

Day 9:
Mashed Potatoes:  The works
2 1/2 lbs of golden potatoes, Boil until soft1 cup almond milk1/2 cup cashew cream *****see recipe below3T Earth Balance2 T fresh dill, chopped1/2 cup Daiya3 green onions, white and green chopped3T sun dried tomatoes, chopped2 T Italian parsley, finely chopped2 T nutritional yeast1 cup Shiitake mushrooms, de-stemmed and slicedSalt and pepper to taste1. put 1 cup cashews and 1 cup water in a high powered blender blend on high for 3-5 minutes until smooth.  measure out 1/2 cup for recipe.  (Put the rest aside for your creamer in the morning.)
2. put the shiitake mushrooms on a pan with 1 1/2 T olive oil and a 1/2 tsp salt.  Bake at 400 degrees.  Stir regularly until crispy.
3.  While the potatoes are boiling, mix in a bowl the almond milk, cashew cream, Earth Balance, dill, Daiya, green onions, Sun dried tomatoes, Parsley, and Nutritional yeast.
4. Drain the potatoes when they are soft.  Combine the ingredients from the bowl and mash the potatoes.
5.  Keep the crispy shiitakes in a seperate bowl until right before serving.  Just sprinkle on the top.
