Meat-less Mondays.
More than just a challenge, more like a reality. San Francisco's Board of Supervisor's passed a nonbinding resolution urging restaurants, stores and schools to offer vegetarian options on Mondays. This is the first step in awareness. Meat-less Monday suggests that reducing your meat intake will also help reduce your saturated fats and cholesterol levels. It may also help lower our carbon foot print. By reducing meat in your diet by 20%, you will lower greenhouse emissions dramatically. One fifth of man-made greenhouse emissions is produced by the meat industry, according to United Nations Food and Agriculture Organization.
The Meat-less Monday Campaign is a project of the John Hopkins Bloomberg School of Public Health and the Columbia University School of Public Health. Their goal is to reduce the consumption of meat by 15% in order to promote health and the health of our planet.

Thank You, San Francisco. I hope more cities follow suit to help us see the benefits of a plant-based diet. Not only for our health, but for our environment.
Enjoy.
