Memorial Day "Raw" Scramble

After doing some long overdue filing, I came across a recipe that I created a few years ago. I actually demonstrated this recipe at The Vibrant Living Expo in Fort Bragg, Ca in 2009. It is a tasty raw nut scramble that is very satisfying.



Indian Scramble

1/2 Cup almonds, soaked overnight
1/2 Cup sunflower seeds
1/4 Cup water
1 1/2 tsp turmeric
1 tsp cumin
1/2 Cup spinach, chiffanade
1 tomato, small dice
2 Tbsp Cilantro, minced
2 Tbsp onion, small dice
salt

  1. In a food processor, combine soaked almonds and sunflower seeds and blend until coarse, then add water and spices and process into a chunky scramble.
  2. Remove and place in a bowl. Fold in spinach, tomato, onion and cilantro.
  3. Season to taste.


This is a great way to start your weekend.
