Roasted Potato and Black Bean Tacos


Not everyday can include a fancy meal. Sometimes, you need something that is healthy, delicious, and quick.  And man, I love me some tacos. These are delicious with a spicy salsa or a fresh guacamole.


Roasted Potatoe and Black Bean Tacos


2 Tablespoons, olive oil
2 red potatoes, small diced
1 cup black beans, cooked
½ yellow onion, small diced
½ bunch kale, destemmed and thickly sliced
1 tsp cumin
1 tsp chili powder
1 tsp salt
2 Tablespoons nutritional yeast
Corn Tortillas


  1. Preheat the oven to 350 degrees.
  2. Toss the potatoes with the olive oil and place on a baking sheet for 20 minutes, until golden brown.  Stir half way through.
  3. In  a large saucepan on medium heat, saute onions and kale together until wilted.
  4. Add the beans and seasonings.  Simmer for 10 minutes.
  5. Place ⅓ cup of the mixture into the corn tortillas and serve with guacamole and “sour cream”.


Serves 2-3


Sour Cream

12oz. silken tofu
½ tablespoon lemon juice
½ tablespoon garlic, minced
½ tablespoon brown rice vinegar
1½ tablespoons apple cider vinegar
½ tablespoon brown rice syrup
½ tablespoons mustard, ground
1-tablespoon nutritional yeast
  1. In a blender, place all ingredients and blend for 1 - 2 minutes until smooth and creamy.
  2. Will last for 7 days refrigerated.
