Wilted Kale Salad with Sprouted Quinoa and a Carrot Apple Cream Sauce

Wilted Kale Salad with Sprouted Quinoa and a Carrot Apple Cream Sauce
1 bunch dino kale, de-stemmed
1 lime, juiced
1 tsp salt
*****½ cup Quinoa rinsed and soaked overnight
1 carrot, rough chopped
1 Apple, sliced
1 ¼ cup raw cashews
1 ¼ cup water
***** PREP ALERT
- Thinly slice Kale and Add Lime and salt in a bowl.
- Squeeze and rub the kale and lemon, salt mixture together. “Massage” the Kale until the Kale is tender and dark in color.
- In a blender, blend carrots, apple, cashews and water until smooth.
- Plating the meal: Start with ⅓ cup sauce on the plate, then add ½ cup Kale and top with ½ cup sprouted quinoa.
