Zucchini Manicotti

This is a delicious and surprisingly simple raw dish that evokes the essence of Italian cuisine with the freshest ingredients. Zucchini Manicotti is a raw summer dish that features the fresh tastes of zucchini, basil and heirloom tomatoes; highlighting quality untouched nutrient dense foods. 

The filling will make you go hmmmm. 


Zucchini noodle

1 Medium/Large zucchini
  1.  Slice zucchini on a mandolin thinly on a bias then liberally salt and set aside for ten minutes.
  2. Rinse well.

Zucchini Manicotti Filling

1 cup cashews, soaked overnight

2T nutritional yeast

¼ tsp salt

1 clove garlic

¼ cup water
  1. Drain and rinse cashews then place all ingredients into a food processor and blend until course, yet creamy.
  2. Season with salt and pepper.

Sauce

4 heirloom tomatoes, rough chop

¼ cup yellow onion, small dice

1 clove garlic

2 T fresh basil

1 T nutritional yeast

salt
  1. Place all ingredients into food processor and blend until smooth.
  2. Season with salt and pepper.

Assembly

Let's put it together: 
  1.  Place 1/3 cup of sauce on plate.
  2. Lay 4 pieces of zucchini overlapping one another 2 by 2.
  3. Place 2 T filling on one end and roll zucchini over filling tightly to create manicotti noodle then place on top of sauce. Repeat 3 times.
