Zucchini Manicotti
This is a delicious and surprisingly simple raw dish that evokes the essence of Italian cuisine with the freshest ingredients. Zucchini Manicotti is a raw summer dish that features the fresh tastes of zucchini, basil and heirloom tomatoes; highlighting quality untouched nutrient dense foods.
Zucchini noodle
- Slice zucchini on a mandolin thinly on a bias then liberally salt and set aside for ten minutes.
- Rinse well.
Zucchini Manicotti Filling
- Drain and rinse cashews then place all ingredients into a food processor and blend until course, yet creamy.
- Season with salt and pepper.
Sauce
- Place all ingredients into food processor and blend until smooth.
- Season with salt and pepper.
Assembly
- Place 1/3 cup of sauce on plate.
- Lay 4 pieces of zucchini overlapping one another 2 by 2.
- Place 2 T filling on one end and roll zucchini over filling tightly to create manicotti noodle then place on top of sauce. Repeat 3 times.
