An EASY Raw Apple and Apricot Tartlet
Trying to eat healthy can feel impossible when you miss your sweet treats. With a dessert like this you don't have to sacrifice your joy of decadent food for health. This dessert is one in the same.
Crust
1 cup pecans
3-5 medjool dates
Pinch salt
Pinch Cinnamon
Filling
2 Apples, peeled
2 Apricots
3 medjool dates
2T Orange Juice, fresh squeeze
Crust
Step 1: In a food processor, blend the pecans, salt and cinnamon until coarsely ground.
Step 2: Add one date at a time until the mixture holds together when squeezed.
Step 3: Divide mixture into two 4” tartlet pans and press until an even crust is achieved. Set aside and refrigerate.
Filling
Step 4: In a blender, add 1 apple, 2 apricots, OJ and dates and blend until smooth.
Step 5: In the food processor, blend the remaining apple on pulse until roughly chopped.
Step 6: Add enough sauce to the apples to create a custard filling.
Step 7: Scoop into the tartlet shells.
Serve cold
