Roasted Cauliflower Casserole

Ever have one of those days when you are in the mood for rich savory decadence? Then look no further. This recipe is something you can make for anyone that loves creamy meals. This is comfort food defined, your friends and family will love.

Roasted Cauliflower Casserole

Cauliflower

1T olive oil
4 cups cauliflower florets
salt

Roux

⅓ cup vegan butter
⅓ cup brown rice flour
¾ cup Nutritional yeast
1 ts[ garlic powder
salt
3 cups water


  1. Preheat oven to 350 degrees.
  2. Toss cauliflower with oil and season with salt. Spread evenly on a baking sheet and roast in oven for 15-20 minutes until it starts to brown.   
  3. In a saucepan, create a roux by melting vegan butter and adding the flour slowly until thick, stirring frequently.  
  4. Add water and nutritional yeast to the roux. Cook until thickened and smooth.
  5. Place cauliflower into an 8 x 8 casserole pan and pour the sauce evenly over it. 
  6. Bake in the oven, uncovered for 20-25 minutes until the tops begin to brown.

 Serves 4-6
